Amasai- Delicious, Easily Digestible


Amasai is a traditional food of the Maasai Tribe of East Africa.  It is a cultured dairy beverage renowned for nutrient density, digestibility and high probiotic and content.  

Plus, at Beyond Organic all of our dairy comes from cows that eat grasses not grain and are never given hormones, steroids and antibiotics.  Each dairy cow is tested for A2 genetics.  If you or a loved one has given up dairy for health reasons, it would be worth your time to read about the benefits of A2 dairy.

Plain Amasai can be used in place of milk, buttermilk, or heavy cream for most recipes.  Rule of thumb is 2 parts water to 1 part Amasai for milk.  To use in place of buttermilk or cream it is an exact 1:1 ratio, so a cup of cream equals a cup of Amasai.

Amasai is great in smoothies, shakes, dressings, cheesecake, pancakes, and more.  Jordan even uses it to make  homemade ice cream & pieBe creative and send me your favorite recipe.  Here are a few that we hope you enjoy.

Homemade Sour Cream (courtesy of Denise D.)
1 cup  Amasai
1/4 cup white vinegar
  
In a screw-top jar or mason jar with lid, combine the Amasai and white vinegar. Shake the ingredients up a bit to thoroughly mix and let stand, covered, at room temperature for about 24 hours or until it becomes very thick. 

You can store your sour cream in the refrigerator in the original jar you mixed it in (or use some other resealable container) for up to one week. Make sure that your sour cream is well chilled before using.


"Ranch" Style Salad Dressing (courtesy of LIsa G.)
1 C plain Amasai
1/2 C mayo (homemade with apple cider vinegar, olive oil, free-range eggs and sea salt so it's healthy)
1/2 T lemon jc.
1/2 T dried parsley or 2 T fresh
3/4 t Celtic sea salt
1 lg clove garlic pressed
1/8 tsp. black pepper
1/2 tsp. onion powder
1/2 tsp. dried dill weed
1/2 tsp. xanthan gum

Blend all ingredients and place in the refrigerator to let the flavors blend a couple hours.  (If this recipe seems sour to your tastebuds, leave out the lemon jc.)

Use Arrowhead Mills Sprouted Grain Pancake Flour, substitute butter or applesauce for the canola oil.  Use Amasai instead of milk.  Top with organic butter and Grade B maple syrup.

Loving Your Lymph

I seem to be talking about the lymphatic system a lot these days.  It's my favorite body system and the unsung hero in maintaining optimal health.  Anyone that hangs out around me long enough, either by taking a class, stopping by the shop or just having tea, eventually all health conversations eventually lead to lymph.

For those of you that have taken classes with Dr Kim Balas and Steven Horne you are probably familiar with the concept of ABC+D.  Well when you give your lymph some TLC you hit all four principles.  Here's how:  It activates the emotional healing response, provides nutrient transport to build, assists with detoxification or cleansing, and works as a direct aid for many ailments.  I find working with the lymphatic system useful for respiratory issues, male & female reproductive challenges, and anyone struggling with multiple emotional blockages.  By the way, if you haven't take this course yet, I highly recommend it if you want to either be a better herbalist or just take better care of yourself.

So when working with the lymph where do you start?  Essential oils and flower essences are a great place to start.  When we talk about different organs holding on to specific emotions I find that the lymph system is very much connected.  So if you find you've been unable to work through a specific emotional concern look to adding some lymphatic support.

Herbally, I love Nature's Sunshine Lymphatic Drainage and Lymphomax and find adding these to any of your herbal protocols will enhance their effectiveness.  Manual lymphatic drainage is very useful.  It is a very light touch, noninvasive therapy, usually performed by a licensed massage therapist.  I personally had a breast fibroid disappear after just one session.

Making good food choices is critical if you want to maintain a healthy lymph system.  Avoiding commercial dairy products is huge.  Most of today's dairy products, organics included is very mucus forming and congests the lymph.  Choose raw dairy from a local farm and take some time to understand the A2 factor.  The Amasai from Beyond Organic seems to be working well for many people.

Lastly, I cannot say enough about the benefits of cultured whey for the lymphatic system.  I've been personally consuming the one from Beyond Organic (Suero Viv) consistently for the past six months and it has become my favorite elixir.  I still drink my kombucha and coconut water but as far as having an affinity for the lymph system nothing comes close.  It's my new "secret" ingredient that seems to be making my herbal protocols all work faster.   Also a great detox option, read my post on The Suero Cleanse.

Fennel - powerful to break down fat

The Suero Cleanse

When it comes to cleanses, I have done them all! Herbal, juice, wheatgrass, lemon juice, colonic, emotional, technological... So when Jordan Rubin, author of Living Beyond Organic and founder of Beyond Organic (a new food company) suggested a Suero Fast, I said Game On.

The fast consists of drinking 8oz of Suero Viv (cultured whey/essential oil beverage) every hour for 12 hours. We tried it yesterday as a family- me, my dog, and husband. I could only get down 32oz and had to stop because I was worried if I drank anymore I wouldn't be able to sleep. My husband Bill was able to drink 80 oz- the goal was 96oz. My dog drank 4oz and then demanded dinner.

So, even from our partial fast (we ended up eating a couple of sardines and an sprouted grain english muffin w/raw cheddar) we felt great. Cultured whey (different from isolated whey found in protein drinks) has been used for centuries as an all over curative. It was made popular by spas and healing resorts in Switzerland.

Cultured whey is a great source of potassium, flushes excess sodium (ie, ladies- helps with swelling) and is great for the lymphatic system (cellulite is the first thing that comes to mind here.) Clearing the lymphatic system can be beneficial for things like allergies, breast swelling, menstrual disorders, prostate issues, swollen hands, feet and legs. So, after my personal experience I decided to create a modified version of the fast and incorporate it into a whole body cleanse. You can do this cleanse with any of your favorite seasonal herbal cleanses or by itself. And remember, while you don't necessarily need to fast from all foods, making better food choices will only enhance the effects. So, watch the sugar, wheat, and alcohol.

Suero Cleanse
Start with 4oz of Suero Viv on Day One. Increase to 16 oz (one bottle) on Day Two and add one additional bottle per day until you reach 4 bottles per day for women/6 bottles for men. Stay on that amount for 2-3 days and then back down by one bottle per day. After that 1/2-2 bottles per day maintenance as needed.

A few things to expect might be increased bowel activity and urination. This has been the most common comment so far. Overall feeling of not being puffy, stagnant with increased energy, stamina and overall sense of well-being. Diminished food cravings, feeling of satiety.
